Every day I hear you in my head…

Every day that I cook, I hear you in my head.  You ask how many things I’m working on, and then I hear your voice in class that day: “If you’re not working on at least three things at the same time, you’re not cooking!”

And then I ask myself: “How many things are you doing?” And I look around my kitchen or if I’m too busy chopping to look away, I count.  Beans simmering left/rear. Green stems cooking left/front. Water simmering for potatoes, right/rear. Soup base right/front. Oven: Middle rack/corn bread, top rack/greens braising….

That was shortly before serving lunch today, but it could have been any day.  I do this every time I cook; because you said so and it stuck.
