So not on the diet plan…

Caramelized Apples with Puff Pastry & Whipped Cream.

Defrost 1/3 sheet of puff pastry, and preheat oven to 400F Bake for 20 minutes, let cool slightly.
Meanwhile:

Make whipped cream 1/2 cup heavy cream, 1 tablespoon vanilla, 1/8th cup sugar) WHIP IT, WHIP IT GOOD, and chill

While you:

Slice 1 apple into thin slices and place in a pan with.

1/8 cup sugar
5/8 cup dark brown sugar
1 Tablespoon finely chopped orange zest
1/4 teaspoon salt
1/4 teaspoon almond extract
1 Tablespoon (good) vanilla
1/16 teaspoon (a dash) black pepper
1/8 teaspoon black truffle oil
Juice of one medium orange
2 shots of dark rum (almost forgot that)

Cook until the sugars have carmelized and the sauce is Au Sec (almost dry)

Slice the puff pastry in half lengthwise then crosswise.

Fill the bottom two halves with the caramel apple mixture, add a dollop of whipped cream, top with other half of puff pastry and add more whipped cream.
