My Favorite Grilled Cheese

I’m craving carbs, bread to be specific, and though I can’t have this, I thought I’d daydream of cheesy, bready goodness and share the recipe for my absolute favorite grilled cheese sandwich.

My Favorite Grilled Cheese

Ingredients:
Two slices 12 (or multi) grain bread
Dijon mustard
3 ounces extra sharp cheddar sliced very thin
2 tablespoons butter cut into 8 equal chunks
15-20 leaves of flat leaf Italian parsley
1 clove of garlic sliced paper thin

Equipment:
Frying pan
knife for cutting
Weight – a smaller pan, pot or plates.

Method:
Set pan on stove over high heat
Spread both slices of bread with enough dijon mustard to coat
layer one half of the cheese onto one slice of bread (with the dijon side up)
layer the garlic & parsley on top of the cheese
layer on the rest of the cheese
place top side of bread on (mustard side down)
take one half of butter and press into one side of the bread
Place in pan buttered side down and weight down immediately

LOWER HEAT TO MEDIUM

Check every minute for doneness
place remaining butter on the other side (up facing) of sandwich and flip over.
put the weights back on
Check every minute for doneness

When golden brown and nicely flattened remove from heat and enjoy.
