Honey Mustard Marinade/Glaze for Chicken

Another great item for a picnic or barbecue, this dish is easily prepared in advance in your oven and chilled for a picnic or done up on a grill on the spot. I love the flavors of this one.

Honey Mustard Marinade/Glaze for Chicken

Makes enough for 8lbs of chicken parts (I use thighs, legs, & wings)

2 1/2 Cups honey
1 8oz jar Maille whole seed dijon mustard
1 10 squeeze bottle of regular dijon mustard
1/4 cup rice wine vinegar
juice of 3 lemons
1/4 cup good olive oil
1 tsp sea salt
1 tsp black pepper
1 tsp oregano
2 tsp paprika (sweet hungarian)
1/2 tsp cayenne
1/2 tsp onion powder

Whisk all ingredients except honey together, then whisk in honey. Let sit for 30 minutes.

Add to chicken and marinate overnight (or at least 3 hours) place into a baking dish and cook for 40 minutes 400F turning once. If skin isn’t sufficiently brown you can broil it for a few, but be careful.
